WHY DOES FRESHNESS MATTER?

So, if you are wondering what difference does it make, there are a few things that impact taste immensely. One thing is the date it was roasted. Your coffee will turn stale, and more than likely, that is what you have been buying from the store. The longest we like to let coffee sit for sale on our shelf is about a week. That is enough time for you to buy it and drink it within our recommended 2 to 3 weeks. Coffee degasses over time, and although it's not technically expired, the quality is greatly impacted after that. Stale coffee will taste more bitter, and lack in flavor profile so please don't let your coffee get too old.


HOW SHOULD I STORE MY BEANS?

This is a question we are often asked. Many people were taught to keep it in the fridge or the freezer. Our advice is drink it with in 2 weeks and you will be fine keeping whole beans in the bags it comes in the bags have degassing valves that will allow pressure to go out as needed. The best way to enjoy your coffee is grinding it as you need it, however, we do understand that is not possible for everyone and you may have us grind it for you. That is totally fine just make sure to keep your bag sealed. Something like a glass jar with a lid will keep it from degassing too quickly as you use it. There is honestly no reason to keep it in the fridge, but if you are trying to store it long term the freezer can help slow down degassing.

GRINDING FOR YOUR BREWING METHOD

If you order your beans ground, we would like to know how you intend to make your brew. Different methods work better with different grind sizes. For instance, if you bought yourself a personal espresso machine but then grind it with a blade grinder or grind it coarsely with a burr grinder, your shot is going to pull very fast and give you poor flavor and more acidity.
